We LOVE protein pancakes at our house. And while I’m a huge fan of our traditional Blueberry Protein Pancake recipe I was recently inspired to switch things up and add some banana (helps with texture as well as taste!). These were a HUGE hit for the whole family….. So today I wanted to share the recipe with YOU so that your family could try them as well!
INGREDIENTS:
1 scoop protein powder of choice (we used Muscle Pharm Cinnamon Bun Protein Powder)
1/2 cup egg whites (or 3 egg whites)
1/2 cup oatmeal (uncooked)
1/2 medium banana
1/2 cup fresh blueberries
2 tsp baking powder
DIRECTIONS:
- Place raw, uncooked oatmeal in a blender or food processor and blend until it becomes fine flour.
- Add eggs, banana, protein powder, and baking powder and pulse blend until smooth.
- Place a skillet on medium-high heat and measure out about 1/8 cup or 2 tbsp of batter per pancake. Top with blueberries.
- Flip and ENJOY!
