A few weeks ago one of my dear Mom friends sent me a text asking for ideas for last minute dinners when she doesn’t feel like cooking. You know those throw together kinda things. I’m going to let you in on a secret…. unless it’s a special occasion, EVERY meal served in my house is throw together and quick. I don’t have time for intricate recipes that involve lots of hands on time and tons of ingredients.

So I’m going to start with mine. Last Summer I was newly pregnant and we were getting ready to announce to my visiting Mother-In-Law that I was pregnant. I was going to make something a little fancier and then realized I was missing not one, but two ingredients. UGHHHH!!! So I decided to improvise and this Taco Turkey Soup it was. Since the first time accidentally making it I have shared the recipe what feels like a hundred times and delivered it to at least 5 or 10 new Moms. It’s a huge hit and literally the easiest thing ever.
P.S. I was so excited about my lack of morning sickness and ability to cook dinner at 6 weeks. Don’t you know that I ended up in bed by 7 weeks and stayed there for the next 4. Thank the Lord for fabulous mother in laws who drop plans and camp out for weeks to help keep life going. What a blessing!!!
Emily’s Turkey Taco Soup
2 lbs Ground Turkey
1/2 packet taco seasoning (check label to see if the packet is for one or two pounds. I use Trader Joe’s as there are no preservatives or weird ingredients)
1 Head Cabbage Shredded Coarsely
1/2 bag Frozen Peppers (I use organic from TJ’s)
1/2 onion chopped
1 small jar diced green chilis (mild)
1.5 quarts free range chicken broth/stock
Brown ground Turkey with the taco seasoning.
Option 1: Put all ingredients except Avocado in the crockpot on low for 6 hours
Option 2: Put all ingredients except Avocado in a large soup pot and cook on medium for about 30 minutes. Lower to simmer for another 15 to 20 minutes until cabbage is done to your liking.
Serve the soup into bowls then dice avocado on top.
Makes 8 Servings. If your family is not large then freeze or refrigerate half for leftovers!
