Momsanity is all about fast meals that taste good but don’t wreck the waistline! Try this ultra tasty Pork, Pear and Walnut salad!
Recipe: PORK, PEAR AND WALNUT SALAD
1 tbsp coconut oil
1 lb pork tenderloin, cut into 1 inch cubes
1 tbsp chopped fresh parsley
1 tsp garlic powder
1 (10 oz) bag fresh mixed spring greens
1 Asian pear, cored and sliced
¼ cup chopped walnuts
1 diced green onion
½ cup balsamic vinaigrette salad dressing
Sea salt to taste
- Heat the oil in a large skillet over medium heat. Add the pork and parsley and garlic. Cook and stir until pork is browned on the outside, and cooked through. Remove from heat and set aside.
- Make a bed of spring greens on plates or platter. Arrange slices of pear and diced onion on leaves. Top with cooked pork and sprinkle with walnuts. Drizzle salad with balsamic vinaigrette.
